Fat That’s Got Your Back
At Farm to Smash, every decision we make in the kitchen is intentional. From sourcing our premium Angus beef to choosing what oil hits our fryer, it all comes back to one thing: doing what’s right for our food and our community.
One of the choices we’re most proud of? Frying everything in 100% beef tallow.
What is Beef Tallow?
Beef tallow is a traditional cooking fat rendered from beef suet. It’s been used for centuries around the world, prized for its rich flavor, high smoke point, and nutrient density. Unlike highly processed seed oils, tallow is minimally refined and naturally shelf stable—making it a clean, functional fat that belongs in a real kitchen.
Why We Chose Tallow Over Seed Oils
The modern food industry has come to rely heavily on seed oils like canola, soybean, and sunflower. They're cheap, shelf-stable, and everywhere. But here’s the problem: those oils are ultra-processed, high in inflammatory omega-6 fatty acids, and break down easily under high heat, producing harmful compounds.
We believe our community deserves better.
Beef tallow offers a healthy, delicious alternative. It’s rich in saturated fats that remain stable at high temperatures—perfect for golden, crispy fries and smash burger edges. It's also naturally packed with fat-soluble vitamins like A, D, E, and K. That’s not just better for your body—it’s better for flavor, too.
The Health Benefits of Cooking with Tallow
Beef tallow isn't just about cooking performance—it's about nourishment. Here are a few reasons why it’s better for your body:
High Smoke Point (~400°F): Unlike seed oils, tallow doesn't break down into harmful compounds when exposed to high heat, making it ideal for frying.
Rich in Fat-Soluble Vitamins: Tallow contains naturally occurring vitamins A, D, E, and K, which are essential for immune function, hormone balance, vision, and bone health.
Supports Heart and Brain Health: Despite the outdated stigma around saturated fats, current research shows that natural, unprocessed animal fats like tallow can support cardiovascular and cognitive health.
Anti-Inflammatory Properties: Tallow contains stearic acid, a beneficial fatty acid known for its anti-inflammatory effects and positive impact on mitochondrial function.
Promotes Satiety and Blood Sugar Balance: Fats like tallow help keep you full longer and reduce blood sugar spikes by slowing the absorption of carbs.
When compared to the oxidative damage and inflammation linked to overused seed oils, the difference is night and day.
A Commitment to Real Ingredients
When we opened Farm to Smash, our mission was to raise the bar for what fast food could be. Seed oils never had a place in our kitchen—not in the fryer, not in the spreads, not in the sauces, and not in the ketchup. Using tallow is one more way we stay true to that mission.
Every fry, every crisped burger edge, every bite is a reflection of our belief that clean food can still be bold, craveable, and deeply satisfying.
The Result?
Fries that are perfectly crispy, burgers that are seared to perfection, and a fast food experience that’s rooted in care—not compromise.
We don’t just cook with tallow because it tastes better (though it absolutely does)—we use it because it reflects who we are. We're here to feed our community well, with real food made right.
Come taste the difference for yourself.
